The green paste does not have the finesse of the red paste but it is a truly rustic flavour, you could not get any more rustic.’This is what makes green curry green. Add a tablespoon or two to a vegetarian stir-fry. Add it to sweet meats and seafood - pork, fish, chicken and veal. Use as a table condiment with curries.
