
Waji's Red Chilli Oil‘A chilli oil can be very basic, just chilli and oil. The most famous is the fiery Chinese Szechuan style, but I couldn’t find one I liked - they were all too bitter. So I created my own. It’s rosy red and sweetly spiced. It’s delicate, it’s complex but mild. The oil is a pure, organic sunflower, the Jalapeño chillies are fresh - every ingredient is fresh - and relatively mild. The dominant taste is lemongrass. This is not a cooking oil, it’s a flavour. Add it at the last moment, it’s a dressing, a condiment.’Splash it on top of noodle soups and Laksa, Dim Sum or a stir fry Drizzle 3 drops over each scrambled egg. Stir in a few drops to sauté chicken breasts, pork loins or beef strips. My Red Chilli Oil is Jalapeño red chillies, canola oil , coriander root, lemongrass , garlic, ginger, and sea salt; cold-infused, warmed, clarified, and bottled. Store it in a cool dark place. 375ml.
