Waji's Port Wine + Onion Jam

‘One year I had the opportunity to buy a ton of onions. I had them stacked up in my cool store but about two weeks later they started to sprout! The onions you buy in the shops have been sprayed with a chemical ‘anti-shoot’. They didn’t tell me these ones hadn’t so I had to think quickly - onion jam. I love port and this jam has a lot of port. But no alcohol. It is highly reduced.
The depth and colour comes from the balsamic vinegar and caramelised brown sugar.
Thick, brown, sweet, spicy.’


Add a tablespoon to a roast beef sauce (demi).
Spread it over the cold meat in a sandwich.
Baste over barbecued red meats.

My Port Wine + Onion Jam is
Brown onions, balsamic vinegar,De Bortolli port, brown sugar, sea salt, cloves
bay leaves and cassia bark; mixed, boiled, reduced and hot-bottled. Refrigerate.
