Waji's Laksa Paste

‘My advice on buying laksa is: read the label. What you want to read is candlenuts. Even macadamia nut is no substitute. Candlenuts have that beautiful, velvety mouth-feel. With this paste, all you need is palm sugar, coconut cream, vegetables and whoosh! - you’ve got laksa.’

This ingredient is the soul of laksa soup.
Make a reduced laksa soup and use as a sauce for grilled or steamed fish or chicken.
Blend the laksa sauce with pea pulp, strain, pour in a mussel for a shooter and
top with a drop of green chilli oil.

My Laksa Paste is
Candlenuts, fresh coriander roots, turmeric powder, fresh onion, prawn paste, canola oil,
dried red chillies and sea salt; blended, heated and hot-bottled. Refrigerate.
